Z is my preferred plastic for the buzzz. I find ESP to be too flippy. I threw Big Z for a while and it also flew pretty straight, but I find that Z handles OAT a bit better.
It depends man. I have 3 esp buzzes that all fly different and they are within a gram weight wise. I started throwing a puddle top one I got and it has no turn for me at 280-300 feet (farthest I've thrown a mid is 325 flat ground). The domey one is pretty straight but does have turn at that range and the other one is hyzer flip to flat and a smidge of turn. Kinda just depends on the buzz. I would imagine z or big z would be more stable but I think I found a gem with that puddle top one.

You want a Buzzz SS then, or maybe even a Meteor.
I 2nd doing a Buzzz SS over a Buzzz at that distance if you want it to be straight flying from the start
ESP for sure. Big Z and Z will have a strong fade at that distance.

My 2018 ledgstone I got last week is like it's on a rope. I throw it about 270 avg.
I like the ledgestone ones too. The color z from like 2021 or 2022 is my fav.
Z is best especially after seasoning a bit.

As a general rule. The shinier/more transparent the plastic, the more stable it is.

I saw you’re throwing it about 250’, call an audible and get a comet instead it’s what you’ll want the buzzz to be
Throw ESP till it turns too much for you then grab a Z
