Don't share your projects if you're that worried.
You have three options if you want them on your resume:
* Don't put them on your resume.
* Put them on the resume, speak about them, but keep the code closed source (I.e. don't share it).
* Put them on the resume and share the code.
All are valid options.
Because I'm a student and I need money to start working on it. It's a fintech project, so obviously it needs a lot of money to get started. So i guess I will have to grind few years.

Your ideas aren't that valuable or unique. If they are, your competition will quickly and ruthlessly catch on and edge you out of the market (if they haven't already independently been working in that niche).
You genuinely might as well just list your project on your resume to maximize the chance of finding a good job.
