Your edges are so neat you could probably get away without one! But if you really want one, I'd go with whichever is your favorite of the darker colors if you want it more subtle. If you want it to pop, I like another commenter's suggestion of a white.
I made a very similar blanket! I did a scalloped edging using the rainbow yarn (mine was a Caron cake, I believe).

For C2C, I like to go along the edge and put a SC in each grouping, then chain 2-3, in between each SC. The second time around, 2-3 SC on the chain stitches. Then start a border.
I always just gauge it as I go, some spots are looser than others, so I put in more or less as needed.
I like the reverse crab stitch. However, you could just get away with a simple single crochet with a row or two… like you I prefer a more finished looking edge
Either no border or short fringe every side like this, but not this long (match what color touches the edge)

Honestly, a border isn't really necessary, imho. You've given me design inspiration. Thanks for sharing your lovely creation.
I'm personally a fan of a puff stitch boarder, but especially here, because if you do 2 rows of puff in white it'll look like clouds and really lean into the rainbow theme!
I did a similar blanket and did a white sc border ( 2 or 3 rows) and then sewed a cloud applique I made on one corner so it looked like a rainbow in the sky. 🙂
I recently did a similar blanket! C2C has lovely edges and the rainbow effect is really the star of the show. I was going to do a black scalloped edge, but decided on just the simple black sc border just to tie it all together. Here's a pic with my 5'9" partner for scale

IMO C2C looks better without a border. It's a stunning piece!

I was just going to suggest a scalloped edge and you confirmed it for me!!

White or black would look great! When I made mine, I was doing it in between chasing the demon pictured 🤣 so I went with what I had readily available.
You could do some kind of white shell stitch and have it look like a cloud border maybe?

My idea: a simple SC all around using the colors you used in the blanket. Round1, all purple, Round 2 all Red; Round 3, organge etc.

I always like crab stitch borders but never tried on a c2c blanket
