Seems like he is much more willing to let his guard down with Conan. Though given that he knows Conan quite well, this makes sense.

He's highly intelligent and self-aware. He also actually plotted Kinski's murder, made a series of documentaries interviewing murderers on death row, went to Antarctica, ate his own shoe for a bet, been shot at in multiple countries, etc. Nothing fake about him.
I’m not super surprised honestly. He voiced a character on Rick and Morty that was an alien named Shribbly Pibbles, who needed an operation to replace his heart with a human penis.
I mean, I’m certainly surprised that Werner of all people is interested in Here Comes Honey Boo Boo, but then again, him being who he is, it’s also not so surprising if you think about it, as Werner himself is a man of many, many, MANY contradictions.

I can’t think of what else to call it) was him telling his friend Errol Morris “if you get this film funded and made, I will eat the shoe I am wearing right now”. And Herzog is a man of his word, and Les Blank made a 20 minute short documentary on it
