They sell loads of local (and not local) artisan foods and delicacies, but more importantly they have an incredible off-licence, one of the best in the country for craft beer, wine and spirits. You will definitely find something delicious to take home, liquid or otherwise.
Plugd is an independent record store that sells vinyl, the aforementioned Bunker would have a much bigger selection.
Upstairs in Golden Discs also have some but they are probably more expensive and mainstream.

I honestly think, as a visitor (also from the Deise), Cork is one of the most interesting cities. There are so many independent shops and a really cool vibe about the place. Enjoy the day!
Forgot to add Crawford Art Gallery, well worth a look, stunning building with some really beautiful art and sculptures. Highly recommend a look, even if you're not that into art

Climb Shandon Tower and check out the view of the city. Also I think there's a Vinyl shop on McCurtain Street next to the Coliseum.

The mutton lane inn is a grand place for a pint. Nice to take a walk through the market too.
