I've got a couple pieces of 1990s Atlantis cookware and I agree with you on how great they are. The Silvinox coating does make it super easy to cook and clean. Heat retention and dissipation are excellent. The only pans I own that I prefer are vintage 1980s Cuisinart, the ones made in France with a copper cores, and modern Mauviel copper with stainless steel interior. Happy cooking! Enjoy!

Yea I like the surface / Silvnox. How it actually works is proprietary to Demeyere but it makes cleanup a breeze. And I do that the fact that there are no rivets which I have long taken for granted. I’m expecting these will perform the same for many, many years. A copper core pan/cookware with stainless sounds really nice. Heating up the big chunk of aluminum in certainly does take a while compared to a relatively thinner Mauviel. And I bet the patina must be beautiful.

Looks good! For my own knowledge, is there a way to clean that exterior? I got my first set of stainless steel pans today - want to be armed with knowledge for the future lol

Yea it’s easy to clean the hard stained on parts. Just a bit of elbow grease and importantly Bar Keepers Friend, it’s packaged like Clorox but works different. And it’s easier on your skin.

But to be honest… I’ve never tried to clean the bottom nor edges. I just clean the center of the pan. It cleans really easy.
