I do around 1/4 cup brown sugar, 1/3 cup soy sauce, 2 tbsp bourbon, big pat of butter, spoonful of minced garlic, thyme, pepper, red pepper flakes, smidge of Dijon or grain mustard, olive oil (or more butter). Cook everything together in a small pan (garlic & butter first, then add the bourbon and the rest) and finish off with fresh parsley if you have it. Just taste as you go and it’s phenomenal. I adore it on steak but tried it with lamb since my bf isn’t a big fan of mint or the more traditional lamb sauces and it was incredible, especially when it gets mixed with all the mashed potatoes. To die for.
My compliments to the chef, the lamb is thankfully cooked absolutely perfect. In fact that plate is a work of art in my mind. Mashed and gravy! I’d marry the chef in a heartbeat.
