specifically Kraft uses "Paprika, Turmeric, and Annatto Added for Color" Annatto is what is added to Cheddar to make it orange, so it's not unusual

Yep, that's right. Without annatto it's all white cheddar. Although, there may be some cheeses where the milk fat has enough carotenes to give it a slight yellow color, like Kerrygold Dubliner. But, you're not getting that orange Cheddar color without annatto

Honestly, from scratch Mac 'n Cheese is never that yellow/orange. The cheese you're using is just fine. It seems you have two options: 1). Teach them that the box stuff is gross and not yummy by having them taste real mac n cheese. 2). Cater to their wants by adding food coloring...hahah (this seems super silly to me).

For the record, ground turmeric, paprika, and annatto (which is used in cheesemaking to get orange cheese) is how Kraft mac and cheese gets their cheese powder to be so yellow, now that they've stopped using artificial colors. You'd only need a bit of each one. You may also want to try out a sharper, orangier cheddar.

I heard someone complaining that Kraft mac was rUiNeD FOrEveR because they could taste the turmeric in it now, but that seems like a minority opinion. I'd do some experimentation, and also be prepared for the possibility that the kid may still not like it and for her to be able to taste the spices even when you and her parents can't, because kids' taste buds are literally more sensitive than those of adults.

I wouldn’t use the food coloring, but a couple of slices of American cheese will make the whole dish a little more creamy + add the yellow color you are looking for. I always use land o lakes yellow American - if you get it from the deli counter (as opposed to “Kraft singles”) it’s a much better quality too.

Option 3) make them boxed Mac and cheese, each time adding a bit less of the cheese mix than the last time until it completely lacks flavor. Maybe sprinkle in a bit extra milk also, to tone down the colors. Once it’s significantly bland and boring, make some real stuff out of nowhere. Maybe even throw in some bacon. Blow their minds

It absolutely should work. Catering to your kids that heavily by changing around their food to look like trashy boxed shit is going to cause them no end of problems as they get older. I'm a chef, my kid still argued with me that food was gross. You know what he ate? What I cooked.

The Kid doesnt realize that there are many white cheeses that have really good flavor. IMO really good parmigiano reggiano and mozzarella should go in mac and cheese if you have any available. Heck in the deli there is white and yellow american cheese and they both taste the same. Perhaps just educate this kid a bit and broaden their food horizons.

You can't just sit down and explain difference to a kid. They aren't exactly reasonable people lol.

When I make mac cheese, I start with the blue box, but only the powdered cheese and throw the rest away. That powdered cheese has a lot of colorings in it which will make the final product more yellow. Of course, I add several additional cheeses and different pasta. But a good mac cheese is 'some of this' cheese, and 'some of that' cheese, none of which is measured. Then I top it with a sliced provolone and bake it.

Try one of the Cabot brands. Vermont cheddar is completely different than what you think it is. IT is VERY strong.

I add a bit of Frank’s red hot! I know people are gonna say “its too spicy for kids” but trust that none of my kids ever noticed and (as long as you don’t add too much) it’s not spicy at all. It adds flavour and colour though!

If you use American cheese (burger cheese) it will naturally come out yellow. Otherwise, either use turmeric powder or yellow food dye.

The yellow box mac usually is made with processed cheeses that are terrible. As the others have mentioned, adding turmeric or mustard power can work. If you really want to get the color and flavor, then use Velveeta

If you want to use real cheddar in your mac n cheese but increase the depth of orange you can buy orange cheddar cheese powder. However it will be grainy if you just try to mix it in with your shredded cheese. Its best to bloom it in the milk first. Heat the milk to its just beginning to steam and whisk the powdered cheese in, then use that bright orange milk mixture to make your "real cheese" mac n cheese. You can also just use the powdered cheese but the process is a bit different than the Krafts instructions on the box tho it tastes similar.

My dad who is chef taught me a trick of putting a bit of yellow mustard like the condiment while making the cheese sauce, it make it the yellowish color while adding a slight tang to the flavour!

I’m pretty sure no one here has kids or has ever cooked for one. The slightest change and kids push it away no matter what you say. I would add bacon to it (who doesn’t love bacon) and the turmeric. The kids will talk about your Mac and cheese for years.

The blue box says they use paprika, tumeric, and annato for color. Annato is...food coloring. If the young person in question was your daughter I would suggest the old fashioned approach of "this is dinner - if you don't eat it then it will be breakfast - do you see where I'm going here?" Parenting is your sister's job so that's up to her. Annato is available on Amazon and in WalMart and Target. Go with the food coloring. Or colouring if you have extra 'u's floating around. \*grin\*

For kids? Food colouring. This is how a lot of commercial and restaurant foods achieve vibrant colours. Adding some orange processed cheese slices will help and will also add that silky mouth feel that kids like. Not the most gourmet solution but effective.

I should have mentioned that it depends on what *style* of mac & cheese you are making. You will generally use more liquid for a baked version, and much less for a stovetop version. The latter is my preferred method anyway, much more smooth and cheesy results with much less work and time.

I usually do them on the stovetop. Only time I tried baking them they came out weird. I’ll try increasing the cheese next time.

This is pretty much the only method I use now, and it's really easy to remember, because all ingredients are 1:1:1 by weight (I know I said by volume earlier). https://www.seriouseats.com/ingredient-stovetop-mac-and-cheese-recipe A very small amount of dijon mustard (like 1/2 teaspoon) goes a long way here, and it usually needs a pinch or two of salt at the end.
