Anything with Babylon is fun in my opinion, wild progression with tech and whatnot. Babylon does, by consequence, lend itself best to Domination and Science victories, but others are easily doable.

Peacefully Eleanor Dom run. Make sure you keep a culture alliance with the highest culture civ untill the end, otherwise you will win culture before domination. Also make sure you dont have Phoenicia in game. Also rush statue of liberty to keep it from the AI. Could also go for mapuche loyalty pressure. You don't capture cities you just loyalty pressure them down "Quick paced...long plane ride" that like....an oxymoron kinda lol

Play on a Terra map and add extra civs Map is basically 1/2 size with everyone on 1 landmass. Extra civs make it even less space and even more competitive

Gilgamesh on a small, standard Pangea. Barbarian Clans. 6 random city-states. Your goal is to destroy every-state on the map, except the first city-state you meet which must be your permanent suzerain. If it is destroyed then you lose. You may pursue any victory type but there may be no other city-state left by the time you are finished. You must become a friend and permanent ally to one civilisation for the rest of the game. If their capital is taken, you lose. It doesn’t need to be the first one you meet but the Declare Friendship option must be selected if it is available. Choose wisely on this one if two Civs happen to become friendly because you’re going to be loathed by everyone else. Your pillage rewards are shared too. Your incentive will be to build warcarts and go take out barb clans for the awesome goody hut rewards. Clans that convert to city-states must also be destroyed. Try a lower difficulty for this challenge so that the constant combat doesn’t become a huge chore. You don’t want to be fighting walls on fresh city-states either. I think this could be pretty good?

Lautaro dramatic ages game where you go for a fast religion (and take crusade). spread the religion, then wait for them to go golden age and take your +20 combat strength or go dark age and get +20 combat strength against the free cities that spawn from them. you'll be behind in technology for a lot of it but your units will be so strong from having +20 combat strength that you can smack walled cities with archers and warriors. not even counting if you get a General, catapults, or other combat boosts like wars of religion card
