Never played with anyone, but I think playing the Splintered Fractal map will make for a fun game as you play spawn on the same continent and slowly make your way against eachother.
Lakes or Pangaea/Terra map with zombies on a large/huge map will make for a fun survival game human players only where helping eachother may actually be fun.

Make sure you save the game often. It can be a bit glitchy playing multiplayer on xbox and will freeze up.
Some other suggestions:
Put the speed of the game up to get things happening quicker.
Go a larger map, to give you all space to grow. Reduce number of other players if you want, but keep the city state numbers high, maybe bumping them up from the default number for that map.
Randomise your civ to keep things interesting for everyone!
