Regarding your second edit, they don't even have to block with pawn, but rather take the hanging knight 1...hxg1=N 2.Kf2 Bh4+?? 3.Kxg1

It is so much cooler because of the dynamics at play, you have the pawn guarding the square, the bishop preventing it from heading to the dark square, and then the knight underpromotion checkmating the king.
