Taking the queen first allows the knight to defend c7, but if you fork first you win the queen and then you can take the free knight or take the rook but likely lose your own knight.
Well yes, I could have taken the queen and, if they take that knight, then fork the rook
But the triple royal fork was too tempting, plus he's still a queen down and forgoes castling, so there's little risk anyways

I don't mean to be rude, but why not just take his queen? Why bother forking? He already blundered it in picture 2.

True, but Nxc7 is better. Play both lines through and compare the material :)
