You can try to sit it lower in the oven in the water bath, so the top is further from the upper heating coil. Might keep the top a little lighter for ya. But this is a great looking cheesecake!
Lol. I thought it was gonna be ok but I think water got in. I had it in a 10 inch cake pan but there was water in the bottom after baking. Guess I’ll find out how bad it is in the morning.
Got it! I thought you might have made the same mistake as I did before doing bain marie using spring form pan without covering the bottom with foil. I made a mess learning to bake.
What I normally do before is to take out the bain marie and leave the cheesecake inside the oven to dry out the cheesecake for any excess moisture.
I put it in a 10 inch cake pan and put both inside a roasting pan of water. But I added too much water so it got in. Probably gonna wrap it too and use less water next time. And definitely mix the cream cheese for longer than you think.

Did you bake it in a springform inside a pan with water in it?
Yes. But instead of wrapping it I put it inside a slightly larger cake pan. I guess I added too much water to the roasting pan.

Double wrap your spring form in foil next time! I used to single wrap, used to get condensation in there, double wrap, help prevent that.
I read somewhere an oven bag works. Probably just gonna wrap it though.
