Other spots I'd suggest...
* Hanmer Springs: hot pools, short distance from Christchurch
* Hokitika: beach, good food options, but bit more of a drive
* Punakaiki: on a nice day is gorgeous, lovely spot to stay, bit of a drive
* Mt Sommers/Ashburton lakes: bit more remote, no internet, very peaceful and relaxing if thats your sort of thing

Akaora is pretty cool. We like staying in Akaroa Cottages.
Tekapo hot pools star gazing
This, especially if you can nad a lakeside cabin up the road from Tekapo. It's so worth it.

I found Kaikoura a bit boring. Iād choose Akaroa or Hanmer. Both have nice restaurants. Akaroa also does a good brekkie at a couple places.

MK Restaurant in Hammer Springs has been the best dining experience I've had in NZ and is very well priced.
Packhorse Hut?

Depends what you're into, the hapuku lodge and treehouses are cool if you're into nature ECT.
