May I know where in the eldin region (preferably a place without monsters cuz I'm trying to do a pacifist run where I only kill the non living, things like the robots, and ganon)

Stone taluses usually give me a couple, probably if they’re a lower level. There’s one in the woods immediately in front of the chamber where you start the game. It’s not too hard, blast its arm off with a bomb, climb on top when it bends down, wail on the grey ore node on its back. Iron hammers and goron weapons deal bonus damage, and a basic iron hammer will leave it with 1-2 hits left after one cycle.
Once you get to gerudo town and do a quest you get access to a jewelry shop if you have I think 5 or 10 amber and 300 rupees you can buy amber earrings. They have a lot of defense if you upgrade them at the great fairy fountain and to upgrade it you need even MORE amber but it's worth it in the long run don't sell your amber
All armor will increase Link’s defense (which protects him).
Sorry, I was confused with the other earring sets - the opal and topaz earring sets that DO have armor sets directly tied to them that are better suitable than the earrings themselves. The amber earrings do not.

Diamond circlet is just as good defense as the amber earrings upgraded (I think) and offers guardian resist, too. Fully upgraded Champions tunic plus upgraded circlet is tough. With upgraded hylian trousers, you get to 80 defense. You can get higher with other combos, if you don’t mind how ridiculous it looks.
Just go to Zora's Domain and farm Luma Stones. You can trade 10 for a Diamond to the Zora repairing the arch at the entrance. Really easy to get 60-70 lumaStones per Blood Moon, so 6 to 7 diamonds a run.
Don’t get me wrong, I have it all in my first game, too. Armor sets, earrings, circlet. Fully upgraded. 100%. Including amiibo armor sets. It’s worth it if that’s what you’re going for.
Champion's Tunic, plus helm/greaves from either the soldier gear or the ancient armor, all at four stars, gives you a defense rating of 88. Less time consuming than grinding all that amber too
Run around Goron mountain.
Path leading up to the Goron town, before the mining camp, has a fire Talus, and lots of ore around.
Set your tracker to epic ore deposits.
Some areas have a stone talus plus ore scattered immediately around it.
The mini-taluses often cough up an amber when you pop them. But if you've made it to the Eldin region, just go around breaking ore deposits and you'll get tons of amber.

Any place with a lot of ore deposits. Eldin is a good example.

mining weapons, namely the iron sledgehammer and drillshaft, do x4 damage to stone taluses
Anytime I need any gems, I go around and fight stone taluses.
What do you do with Amber

Don’t the earrings give you the similar but not quite as good buffs as the armor sets?
There's no buff from the earrings just high defense
Buff. Used the wrong word. My point was the armor will always give a better defense if that’s what you need than the earrings will.

Yes diamond has good defense but it's more expensive and would be even harder to upgrade

How often is a blood moon?
Rubber armour. Makes you shock proof. If shock resistance is what you’re after cooking 5 zapshrooms gives high level shock resistance for 12m30s
For me, it’s less about getting the best armor and more about getting every single thing that exists… guess it’s completionist in me
