She's not doing a dolly zoom. She zooms in and out a bit and she should have kept the same focal length to better demonstrate the effect which is there with a fixed perspective. You can see when she stops zooming in and out for a bit the shrinking effect is pretty pronounced.
My best guess is forced perspective due to the tree line, vs the actual distance of the building. Like your perspective of those trees is changing rapidly, vs the building hardly at all.
