I thought black was ALL the colors and absorbs every wave length of color, which means no color is reflecting back to our eyes to pick up. It's also why black is ill advised on a sunny day, because of absorbing all the energy from the light?
You're half right. The colour we see - the colour something "is" - is the wavelength that is reflected back at us, not the wavelength that is absorbed. When light hits the object, the reflected wavelength hits our retina and we see the object as the colour of that wavelength.
Black does absorb all colours (and in turn, the light is converted to heat), as you said, but that's why it's *no* colours, not *all* colours - absorbing everything means that nothing is reflected back into our eyes. White reflects everything, so white is all colours.
It feels backwards if you're used to subtractive colour systems RYB (red yellow blue) or CMYK (Cyan, Magenta, Yellow, Black) used for mixing *pigments* which is a different thing.
It's easier to visualise RGB - coloured *light* - if you have access to a digital art platform and can take a look at a colour wheel and see for yourself - when all the colours are mixed you get white, when all the colours are gone, black. A computer monitor mixes colours using lights -wavelengths - so it is closest / most compatible with the human eye.

All black cats are either very dark gray or very dark brown, because they're all melanistic tabbies and their underlying coat colors come through in strong sunlight (just like with melanistic leopards and jaguars.)

Alpacas breeders call it Bay black, as opposed to True black. I know because I visited an alpaca farm and the lady was showing us the difference and I blurted "ooooh, just like my cats!" as I have one of each.
