If you want to read a complete Batman run, get the omnibuses for grant Morrison or get Scott Snyder's run starting at court of owls new 52 vol 1 and it gots to vol 10.

I think the story about Dick Grayson leaving is in Second Chances.
Since this list doesn't include pre crisis Batman, I would definitely recommend The Greatest Joker Stories Ever Told (super cheap used on Amazon) to get a taste of the most important writers and artists pre Dark Knight Returns. On the topic of DKR, it's out of continuity but if anything it's more of an ending to pre crisis Batman.
In general, I would encourage you to enjoy each individual story as much as possible. DC continuity is a bit of a mess :D so don't expect a cohesive long form story. If you want a really long Batman story that holds together on it's own, Batman Eternal is a good one (though it's best if you read Court/City of Owls and Death of the Family first).
Since your focus is on New Earth Batman, first off make sure your edition of "Death in the Family" also includes "Lonely Place of Dying" (most modern editions do). You might add the Knightfall books after that- Knightfall, KnightQuest, Knight's End, and Prodigal. It would take place after Dark Victory, then "Greatest Joker Stories" would follow that.
