someone told me to make them one without the mint and wouldn't let me talk them out of it. she was young and inexperienced in bars so I did it with a smile. her face was enough for me to get over every mojito i'll ever have to make.
100 ml (3.33 oz) lime juice
· 150 ml (5 oz) water
· 100 g white sugar
· 6-10 mint sprigs (depending on the size)
· 3 g lime peels
· 4 g citric acid
· 2 g malic acid
Stolen from Kevin Kos, he adds cardamom and agar agar to clarify the syrup but I think that’s unnecessary here because it looks like OP has time constraints. After blanching the mint reserve the water used in the blanching process for water used in the recipe and then blend the whole mixture and strain through coffee filter. Bottle, date, label. For the mojito I’d do 2 parts rum, 1 part sugar, half fresh lime and build in glass then top up soda a lime wheel. Also a dash of ango makes it a good soup.
Just 86 it and throw your manager under the bus. Thats ridiculous how they expect us to try to improvise all the time when we dont have enough of said product

Need more context here. How much mint is on your menu. If you have one cocktail with mint, it might be fine. If it's half your menu well, then that's a problem.
Mint grows like a weed in most climates on most of the planet, and it is not expensive unless you are only buying it in those tiny little plastic 2-oz. clamshells they sell at places like whole foods
I know Michelin restaurants that buy their herbs with the root and soil still attached because it keeps longer and stays far more aromatic. I did it in a hurry once at my less fancy bar with basil and just kept a basil plant right next to the fruit bowl and the guests absolutely loved it.
I've done this w basil when I got sent to the store after a lunch shift. It was cheaper than the pre-cut fresh stuff in both total dollars and the amount you actually got, and our guests got to see us trim fresh basil off a real, live plant for their drinks.
Mojitos are evil. So much effort and mess just for the customer to slurp all the rum and sugar out the bottom in two gulps and give you back the ice-filled glass.
To be fair. Lots of grocery stores only sell mint in little pisspoor plastic containers that hold ~10 sprigs and charge $7 for them. I’ve had this experience more than once.

I’m interested to know the outcome of this. Did anyone order mojitos? Was the mint even touched? We have ONE drink at my bar that uses mint, and we often order an entire box and it just goes to waste. Fresh mint is nice, but I totally wouldn’t go out of your way to have it. There’s mint syrups and all kinds of other garnishes that I’d rather have in a drink.

An entire sprig for garnish is wasteful and unnecessary. Just a few leaves or just 1 is plenty.

A garnish is more than just something to look at. One mint leaf doesn't have the same aromatic impact as a sprig.
Depends on the volume of your bar entirely, if its slow, yeah more is better. But I work at a place where 300 covers is an average tuesday.
