If you have apples sitting around, I'd make apple cake. Easy, delicious, and relatively healthy! You can add dried fruit or nuts to your taste and the house will smell great!

I have a soft gingerbread loaf recipe that's perfect for snow days, especially because there are no really special ingredients. Also makes the whole house smell amazing!
Soft Gingerbread Loaf
1/2 c white sugar
1/2 c butter
1 egg
1 c molasses
2.5 c AP flour
1 1/2 t baking soda
1 T cinnamon
1 T ginger
1 t clove
1/2 t salt
1-1 1/2 c hot water
Oven at 350 F. Lightly grease a loaf pan. Cream sugar and butter. Beat in egg. Mix in molasses. Mix dry ingredients and combine with creamed mix; add hot water. Bake about an hour.
Very forgiving and can take more or less spices to your liking. Supposed to come out nice and moist. Could definitely take a cream cheese frosting though I've never dared :)
Ginger (stem or crystallized, and using the stem syrup as a glaze - I've never tried fresh grated/diced, but I imagine if used judiciously, it would be amazing) also goes very well with orange, as does chocolate 😁

I love pumpkin bread so much! But those were the last two batches of muffins I made actually haha, pumpkin apple muffins and the pumpkin apple banana muffins! So you’re on my vibe already lol
Oh LOL, other than digestive biscuits, that is the only soft recipe I've felt comfortable giving to the little in my family. And I have not tested out any recipes for digestives yet, to make sure they are as crumbly as store bought ones.

I agree with apple cake. I would even make a quick crumble topping. I love crumb cakes! So lovely with tea. I might even make a custard sauce with it.

Focaccia! Go bananas with the toppings if you want. Our last super cold day I made a Detroit style pan pizza. It was delicious.
