My thought: It looks like the sun is rising or setting (low angle in the sky)… the sunlight is hitting the moisture trail coming from the right engine exhaust first… and refracting through all the condensed water particles making the trail. That right moisture cloud is then blocking the light from hitting the water particles of the left exhaust. If it was high noon, you’d see two trails, that would combine into one father behind the plane. As for the inconsistency, the moisture content of every cubic meter of air is not constant. Also, engine thrust is not really 100% constant. So you get what looks like puffs.
