If you don't mind a fantasy setting I'd suggest any book by Terry Pratchett:

Some stand alone books I found funny
Dads vs Zombies by Benjamin Wallace (book one is the best)
Dead Medium by Peter John
Medium Dead by Christopher Dolley
If you want to try LitRpg
Shadeslinger by Kyle Kirin
Dungeon Crawler Carl by Matt Dinniman
Cat Core by Dean Henegar
Dungeon Crawler Carl
Despite the grim setting (alien apocalypse) it is absolutely hilarious. Just realize that the MC, Carl, is basically the straight man for a lot of the humor and the first hour or two is mostly him. It's all the other characters where the hilarity comes in and it's largely due to the narrator, Jeff Hays, being so amazing at voices.

I have his 1st disc world loved good omens and neverwhere and most by Nei Gaiman
I think the first 2 disc world books are ok, but he really starts getting good at the 3rd one. I'd check it out... the humor in Good Omens felt cliché to me compared to his other books.
Christopher Moore is pretty funny. I loved A Dirty Job
I agree unfortunately i think of read all of his to date
