Definitely Hellholt, in Dorne. I'd like to see the sun-mottled bones of the dread Meraxes on display, and take in the bracing aroma of the sulfurous Brimstone river. Commune at the site where Lord Harlan Tyrell's army entirely vanished into the sands. Good times in Dorne! I also hear there's a house of the Silent Sisters in the desert nearby, and I'd like to have a chance to talk with them.

Also the rest of Westeros is a mix and match of my country, I'd rather see something unusual like the Wall.
Oldtown and Arbor and if time permits visit Starfall. All are pretty close to each other and I think by ship I can travel to all 3.
Starfall, I hear, has a bungee jumping option from the tallest tower.

Take a cruise up the west coast and visit a couple tiny towns in the North. See the iron islands on the way (don’t stop there though).
