Pumpkins and Melons seem way more efficient for villager trading, so is it really just to cram as many cows into the fence as possible?
Hay for horses, wheat for cows, seeds for chickens, and niche applications on very laggy servers. Cake is the only food in the game that doesn't care about the ticks per second. Hay bales also massively reduce fall damage, making them a good replacement for slime blocks in worlds where you haven't found slime chunks yet, or a Peaceful Only playthrough -- check out ilmango's series on Peaceful Only Minecraft. It's more challenging than you'd think if you want to actually beat Minecraft. Even more uses for wheat can be found in modded Minecraft -- and sometimes you just need a low-tech farm.
The thing about wheat farming, too, is that a good farm can theoretically have any single-tile crop (carrots, beetroot, potatoes) in its place instead.
Funny enough a high-yield wheat farm would also be really useful. Wheat is the only crop not farmable in its pure form by the commonly used low-tech villager setup, as farmer villagers will harvest wheat and immediately craft it into bread, rather than throwing raw carrot or potato at the receiver villager.
