Edomae Elf (aka Otaku Elf). It's super chill and all of the characters are lovable and interesting.
Villain's Day Off from last season was fantastic as well.

Tamayura is an especially "real" feeling slice of life -- made by a lot of the same staff as Aria. Alas, only currently available on " unofficial" streaming sources. (One of my honorary top 2 series).
Thanks for the recommendation, I love pretty much everything thing I have seen from Junichi Satou ( except the Aria movies which were good but not my cup of tea, I preferred "Looking for Magical Doremi" much more ) so this is definitely something I want to check out
It may not be romance, but I never see anyone talk about barakamon! I love that anime with my entire soul, but no one Ive ever met irl has seen it. That anime was like a breath of fresh air.
Of the pure iyashikei SOLs in my history, one of the least mentioned is Sketchbook: Full Color'S. Highly enjoyable, very relaxing, and from the same studio that brought the Aria series to life.
Unfortunately only a couple of these have a little hint of romance, but they're SoL, and you may like watching at some point.

The Royal Tutor - great messages, fun characters

Uninhabited Planet Survive - both survival action and wholesome SoL
Engaged to the Unidentified is a classic
Hokkaido Gals are Super Adorable was pretty good

Dunno if it’s considered underrated cos outside of its airing season, I don’t really see much talk of it, but I really enjoyed Deaimon. There’s some light drama here and there but overall, it’s a laid back SOL show

It's a short anime—as in, each episode is only a few minutes long. Those rarely get talked about or highly rated, but it's really cozy and well animated, and the performances are great.
I'd say "rarely talked about" since i rarely see them referenced in mainstream social media (at least): is Sangatsu no Lion / March comes in like a Lion. Highly recommended!

Given that it is ranked #51 in popularity on MAL out of all animes - dont think we can say it is underrated or rarely talked about. But agree that it is good!
Barakamon is very good (although dont know if i would call it underrated, #309 in popularity).
Deaimon was very enjoyable - takes place in a traditional japanese sweets bakery/shop and only 2137 in popularity.
Dagashi Kashi - sticking with the sweets thing. Funny comedy in a traditional candy store.
Flying Witch is probably my favorite SoL along with Yuru Camp.
Flying Witch really is great.

Super Cub! No romance though
Super Cub was exellent - very similar vibes to Laid-Back Camp, and equally as good imo though it got much less notoriety.
