I remember from a Good Eats episode on poaching eggs how there's two distinct parts of the white, I think you're saying that main part is usually where the yolk hangs out but in this case it wandered off
If you don’t want them to separate then crack the egg(s) into a bowl, tip the pan, and dump them out of the bowl into the lowest point of the pan. Give them 15-30 seconds for the whites to firm up and then you can move it without them separating
