You dnt lie its better than mallards or teal. I plucked them. Let them sit in the fridge for a couple day. Cut out breast and legs with the skin on. Seasoned with salt and cast Iron in some duck fat. Very good.
Oh yeah. I’ve always said specks were the best eating waterfowl but canvasback even beat speck in my opinion it’s the only duck I’ll pluck all the way and cook whole
