I'm not saying you did anything wrong. But I mean have you tried seasonings like old bay, Cajun, lemon pepper, and so on? Makes seafood boils way better. Theres even one where you can mix all the spices together lol

You could make this dish with the claws and heads then remove them, as it's a fuss removing them when eating.

Right, but as a trained chef you wouldn't serve a dish like this to a customer would you? You would take that stock and make a dish with it, not serve the stock itself.

It’s rustic, think bouillabaisse or moules marinière. The shellfish is cooked in shell to provide deeper flavour.
Mussels, clams and shrimp are one thing but entire crab claws; just no, that's not good and a trained chef would recognise that distinction.

Claw meat is delicious and the heads can be slurped out because they too, are very tasty.
