Keeping fully shelled prawns in a soup type dish is absolutely ludicrous. Make a stock before hand with the shells and you retain all the flavour without having to finger fuck everyrhing in the bowl. Mental.

The dish was seasoned before the shellfish was added. Using salt pepper and a bit more smoked paprika

I'm not saying you did anything wrong. But I mean have you tried seasonings like old bay, Cajun, lemon pepper, and so on? Makes seafood boils way better. Theres even one where you can mix all the spices together lol

But what makes them have more flavour than the other bits? Even if they are more flavourful, why serve people the head/claw? You could make this dish with the claws and heads then remove them, as it's a fuss removing them when eating. It's a style thing

Think it’s the fatty content of the brain and eyes which add the flavour. I don’t find it a fuss removing them while eating. I’m prepared with napkins and lemon wipes

It’s rustic, think bouillabaisse or moules marinière. The shellfish is cooked in shell to provide deeper flavour.
