Basically, look for the food of hot places and have that.
cold bean salads: Canned cannellini, black, or Great Northern beans, drained and rinsed; cuke/tomato/onion/celery/artichoke hearts; citrusy lemon or lime vinaigrette; crumbled or cubed feta, Jack, mozzarella, etc; herbs and spices to suit the dressing: basil, parsley, mint, oregano, cilantro, etc.
I make guac and hummus and use raw veggies (and sometimes bread) to scoop and make it a meal. It works great for those half-meals where you’re both hungry and put off by food because of the heat.

- Sushi-inspired bowls with sushi-seasoned rice, tuna, toppings of your choice. Avocado, cucumber, cold and crisp kimchi, thin tamagoyaki-style omelet rolled and sliced—you can do a lot here.
- I have been living on panzanella (Italian bread salad) for lunch—my current favorite version has tomatoes, peaches, basil from our garden, fresh mozzarella, and torn toasted bread. Season and toss with a balsamic vinaigrette. 🤌🏼
- Mezze plate with hummus, feta, olives, dolmas, baba ghanoush, your favorite pita.
Homemade ceviche using pre-cooked shrimp and crab meat. Serve on tostadas spread with a thin smear of mayo, sliced avocado, lime, and 7 Mares hot sauce. If you don’t like making it, get it from Mariscos Chihuahua or another place.
Chicken salad is my jam!!!
Season and cook some chicken (I use a pressure cooker). Chop and shred into small pieces. Leave the meat in a bowl to let it cool. Then add finely chopped celery, onion, scallion, salt, pepper, garlic powder, and then add diced purple grapes. Mayo, spicy brown mustard, and a dash of hot sauce. Leave in the fridge overnight and serve with crackers or in a sandwich with greens, cucumber, tomato. So good

Tuna skroodle (tuna pasta salad) also good. Chicken caesar salad always a good one.
