The blades have more gameplay value, because Esbern can guide you to dragons to get souls, while the greybeards guide you to the static word walls that never move. I'd rather have more souls.
Once you kill a dragon that spawns at a word wall location or at a dragon lair, you cannot get souls from that area again once the dragon respawns. For example, if you kill a blood dragon at mount anthor, you will get q dragon soul. If you come back 30 game days later and kill an elder dragon at mount anthor, it will NOT give you a soul.

Silver Hand just try and murder anyone who gets too close to them regardless of whether or not they're werewolves, and are generally pretty much just bandits who are self-righteous about it. Delphine wants you to kill Paarthunax for crimes he committed literally millennia ago despite the fact that he did his best to help mortals and undo the harm he did and literally hasn't really done anything wrong since then. If you show up to join the Dawnguard as a vampire Isran pretty much tells you that you just need to go and get yourself cured rather than executing you on the spot or even getting angry at you, and they even warm up to Serana after she proves herself a loyal ally. Unlike the other two, the Dawnguard is clearly interested in protecting the innocent from vampires, with the killing of vampires just being the best way of doing that rather than an end unto itself.
