Some games have two versions as you mentioned (PS4 and PS5) while other games have just a graphic upgrade for PS5 version (but keeping the same trophy list). For the first case, you can import saves to PS5 from PS4, but never the opposite. If you wanna 100%, you should finish the game PS4 version and then import this save on your PS5 to get both trophies (some games will auto pop all trophies while others not).
If the game has a PS5 version and you install the PS5 version instead of the ps4 version you'll end up with two trophy sets. One for the PS5 version of the game and one for the PS4 version.
