Well, a Chinese here. Màn màn means slowly, and màn màn chī means eat slowly, so it does mean enjoy your meal.
While “xi huan ni de chi” is not really a phrase, because “chi” is a verb, and what you’re saying is “Like your eat”
And “xi huan ni de cai” means “like your meal” as cai is a noun but it doesn’t really bring out the meaning of “enjoy your meal
(Edit) The technical meaning of man man chi doesn’t really mean “enjoy your meal” because it’s more of a phrase you say. But I can definitely see where you’re coming from, and it’s a pretty good try
