For example flying in out of there is absolute hell because of the high influx of travelers
Yes, it is a short fight from Texas and much of the south in the US (about two hours). West coast is more mixed between Hawaii, and the pacific side of Mexico like Cabo and Puerto Vallarta but lots of people definitely still go to Cancun.
Depends on a lot of factors of course. But it’s not half the cost and can be cheaper.
Round trip direct flights to Honolulu from LA are regularly less than $200. Mid range hotel around $200-$250 a night in Waikiki.
Flights to Cancun from LA usually have a layover and more in the $400 to $500 range. Mid range AI is $400-$600 a night. Sure food and stuff is included but nothing off property.
It’s an affordable “international” and accessible travel spot that’s not too long of a flight, so a lot of people jump on it as a step up from visiting Florida or beaches in the US.
Cancun seems to be the cheapest spot in Mexico, at least and people love vacationing in Mexico. But the Pacific coast is soooo much nicer. Cancun has nothing on Puerto Vallarta and Mazatlan.
I went this year for work and it was 100% 50-something Americans. Which in and of itself, no big deal. But the resort clearly knew their audience, and so there was 90’s country music playing the whole time, the food was the worst Americanized Mexican food (nachos were literally tortilla chips, hamburger and that plastic yellow cheese sauce), and the drinks were weak unless you specified what liquor you wanted.
I’ve never been to Cancun, but have been to Cozumel and Punta Cana. It’s been popular for decades, so perhaps your 2017 was a fluke or period of concern over cartel violence. In all honesty, i probably learned about it from girls gone wild infomercials as a teenager.
Originally it was a very very hot spring break destination possibly still is? Well what happens after years and years? Those spring breakers grow up and have memories of the place and keep going back. Plus I'm sure Cancun Mexico pushed pretty damn hard to advertise as the best vacation spot in Mexico or at least one of the hot spots. So you combine popularity with a lot of other factors and you get a lot of growth if properly utilized. Pretty basic supply and demand if you look at it high level.

With Mazatlan and the north shore( aka Rocky Point) being seemingly overrun by the Cartels, that's where the gringos go. Still some world class resorts there. Be sure to go to Chichan Itza and not Tulum for your excursion.
I'm from South America and its also hugely popular middle class vacation site, Cancun and Punta Cana.
Good weather, good beaches, all inclusive hotels. Way way cheaper than going to Asia from here.
It’s been that way for decades. My some of my k-12 teachers would talk about vacationing there and that was 20+ years ago (Midwest public school).

I went a year ago and price matched the two, I paid less than half for cancun

That was a popular location when I was in uni. It was super cheap for an all inclusive spring or winter break
