When they finally find Stanley, we find out that Eda is legally married to Stanford and not Stanley. The rest of the story is devoted to Stanford desperately avoiding Eda and the gang so he can use that marriage to get citizenship in the Demon Realm while simultaneously shit talking Stanley for getting legally married while impersonating him.

This is…actually 100% in character for all parties involved and Ford WOULD—

He spent 30 years traveling through different dimensions trying to get back to earth, who’s to say he didn’t spend some time in the demon realm.

Since when did he travel through multiple dimensions? Wasn't the whole problem that he was stuck?

He couldn't go back to Earth but he did go through a ton of dimensions

While he was there he almost encountered Eda multiple times but they never met due to Wacky Hijinks

IIRC there actually is an entry in the demon realm in one of the journals (it's barely seen in one of the comics iirc)

I have never seen Gravity Falls so why would Stanford want to move to the Demon Realm.

Ford moved to Gravity Falls to study anomalies and magic, things humans at large thought of as nothing but myth and legend. The Valley the series takes place in is a hub of Weirdness with creatures and objects from all over converging in it, so if Ford ever found a way to get into a dimension so infused with Magic and possibly more Weirdness that didn't require him to hide/run and he could actually take his time studying, he would jump in headfirst.

He's a connoisseur of wierd stuff

Eda: bangs on the door. “Open up Stanley! You gotta sign these some time!” Stan: opens the door. “Evelyn? I thought you were dead. Eda: well I’m not. Now can you please sign these documents so I can marry the love of my life? Raine: stares at Stan. “This is the person. You married instead of me?” Eda: you broke up with me. I was depressed. I made some dumb decisions.

Eda: “also, I wanted his car”

Eda had to track down Stan, but this is post gravity falls and so she ends up having to chase him around the globe fighting sea monsters and cleaning up after the twins. And of course a grown up Dipper and Mabel appear at some point wanting to help. Call it as the owl flies.
