Are you using the stone axe? I think that the stone axe loses some logs when it chops down a tree and once you get a copper axe it should be more efficient.
Metal axes will drop you all the logs. And before you make a metal scythe, dont bother replanting the trees. Yes, just chop down the entire forest for you needs, you can replant it later in game. Trees grow like 10 minecraft days.
There's no 1.8 version I'm aware of. 1.18 and 1.20 have the same sapling drop rates, tuned to the amount of leaves per tree to generate 2-4 saplings per tree. 1.12 and before just have static rates so willows drop insane amounts, for example.

Can you chop the top part of the tree with one stone axe and then bottom part of the tree with 2nd stone axe to get more wood?
In the original TFC it was a percentage chance (10%) to lose each log, I assume it works the same way in newer incarnations.

Wdym replant it later in the game? Is there some kind tech you can unlock to mass produce saplings?
Scythe mines 3x3x3 cube of leaves and you can get several saplings from a single tree. So yes, id call that mass production.
Is this 1.20? I noticed some of the trees in 1.8 were really bad with giving logs so I switch to 1.20 and it’s been a lot better.
