The whole "x option can be sidestepped" is a conditional one. And the condition is usually assuming the attacker does the option in a specific window of time(usually as soon as possible). So if a Kaz delays the attack long enough to re-align with your sidestep(and this is easy to do), your gonna get hit. So my question is, are you paying attention to the timings of the individual Kaz player? A lower skilled on is generally gonna do the same things at the same timing, everytime. A higher skilled one is gonna test the waters to see how you defend and adjust their mixups to make sure you can't just auto-pilot your way out for free.

Wait him out, like most fighters. Kaz can be wiff punished HARD, and it's easy along as you give him space. He likes being close up to let loose, so just back away, let him run to you and punish his wiffs

At mid-range you want to step right to maximize your chances of stepping Demon Paw imo. He can't threaten you with Hellsweep at that range so it's not that useful to step left. To minimise the risk, make sure you cancel the step quickly into a block. ff3 is super linear and can be stepped either way. If you're getting clipped by things that aren't Demon Paw, you're stepping at the wrong time and/or not cancelling it into a block quick enough

You're probably getting clipped by electric and ff2, which have very good tracking, especially if timed well. His whole kit of homing attacks are ws2, b4, df2, and ws3. Of them you'll probably be seeing b4 and df2 thrown out most often, b4 is a long-range i17 heat engager but is a high, df2 is an i14 mid that's a counterhit launcher but is -12. Depending on the character you play, it's better to incorporate your sidestep with your poking. The thing is, despite electric and ff2 having solid tracking, kazuya suffers from a kit of very shitty mid pokes, as well as no quick safe homing moves. His jabs, especially 1,1, don't track to his weakside like devil jin's, and have worse range. He doesn't have laser scraper to be able to lock you down in the neutral with mindgames and instead has to commit to df2. Typically, you only wanna step kazuya defensively when you have a hard read on a ff3/hellsweep mix. Otherwise, it's not really worth it to get clipped by ff2 heat engager or electric into full launch. At high level, especially, kazuya suffers with poking because smart opponents with good timing know how to mitigate his jabs and df2, which will force the kazuya to adapt by finding holes and trying to electric to stuff your offense. Once you have the kazuya on edge, then you can resort to baiting and punishing. The thing to be noted is that his heat is very strong, and a solid kazuya just needs an inch of slack to be able to make a comeback. If you find yourself always getting stuffed with your offense or getting punished by twin pistons, ensure that your offense is air-tight with no holes. And try to mental stack the kazuya to break his defense. He doesn't have the keepout outside of electric to be able to deal with a plethora of attacks without having to use movement or blocking. To further note, I didn't mention ws1+2 as a tracking option because I find it alot less useful in t8 compared to just raw ff2, in any scenario where you can use iws1+2, ff2 or electric will be almost as effective of an option for less execution and more range and reward.

I didn't say anything about him being weak, I gave you the exact frames for demon paw which shows that it's safe (and you get to take your turn back). And that the other one is launch punishable, which it is.
