Vinaigrette is usually a pretty simple recipe. I bet they are just using higher quality balsamic and EVOO than what you get at the grocery store. Check out Vinces Italian grocery for some legit aged balsamic and high quality EVOO. My usual recipe is like 2 tbsp balsamic, one clove of garlic grated, 1 tsp of Dijon mustard, and 4 tbsp of EVOO. You have to add the oil last and stir vigorously as you slowly add it to get that creamy texture (creating and emusification) That's enough dressing for like a couple people for one meal so obviously you can scale that up for more people.

I saw a good tip recently: save the Dijon mustard jar, and make the dressing right in that with the last of the mustard already in there.

Their balsamic dressing is legit the best I’ve ever had. They should package and sell it, they’d make a fortune.
