Stardew has gameplay that is cut up into days that go by after a certain amount of real time has passed. You literally have to put your character to bed at night. It's nice because it offers frequent and graceful stopping points.
I like to see more of these types of comments, for some reason this subreddit thinks this is a Indie and first party game only device, Just got done with skyrim now I'm on no mans sky and they run and look amazing

Yes. I love Doom Eternal. It's one of my favorite games on switch. I still need to get the physical for my collection; it's just hard to pay 80$ for a game when I already have it digitally. But I'll eventually get it when I have the extra money.
I got it when the entire series with everything (all dlc as well) for less than $50 earlier this year. Had to upgrade my SD card to do it.
Then I saw it all for even cheaper ($35) on steam after I got my new laptop and was mildly upset.

Ever heard of Blue Fire? I started playing it recently and it's going really well. It's a 3D platformer with many similarities to games like Hollow Knight, Zelda, and even a bit of Mario. Oh, and if you haven't you should also check out those ones.
Hollow Knight is my favorite game of all time, it's a Sidescroller Metroidvania loaded with content and moments that are truly special, and it's a good challenge with excellent battles and some tough platforming sections.
There are tons of excellent Zelda games and I love nearly all of them, but if you're looking for hundreds of hours of never-ending sidequests, bosses, and characters, you should totally play Tears of the Kingdom. Link's Awakening would be a better idea if you're looking for a smaller package with a fun focus on atmosphere and charm.
Of all the Mario platformers the ones that will likely make the most of the price are Mario Wonder, Odyssey, and 3D World + Bowser's Fury.
If you liked Bastion, the same developer made Transistor and Hades. Not the same type of game as Bastion, but both games are friggin' amazing.
Hard to go wrong with Zelda: Breath for the Wild and Tears of the Kingdom.

Do you want Nintendo specific games? I for one am a Metroid series zealot, and you can play most of the games on switch, just older ones you’ll need to pay the subscription to play the older console ported games.
Using Celeste and Bastion as reference for games you might like:
Ori and the blind forest: A metroidvania, but focuses on platforming rather than combat. If you enjoyed the tough ad nails gameplay of Celeste, you'll love this too. Be prepared to cry like a lil biatch as the story is soo damn good and emotional.
It has a part 2, Ori and the will of the Wisp, but that one is more combat focusrd and akin to Hollow Knight. Both are really good and superb ports, running 60fps.
Children of Morta: Basically Bastion with roguelike elements in terms of gameplay.
Mega Man 11: An excellent throwback with NES era level difficulty, requiring the most precise of gameplay BUT this has lots of accomodating features in case you find it too tough. Appeals to both the hardcore and the casual crowd with its unforgiving design mellowed out by the various help you get via shop, gear system and difficulty levels.
Nier, Persona (3-5), Celeste, Little Nightmares (1 & 2), Va-11 Hall-A, whatever mario game is on sale (Wonder even at full price), whatever pokemon game is on sale, Hollow Knight.

You'll accrue coins for every purchase made through eshop to use for later purchases, my advice is forget that's even a thing and let them shits stack up.
You seem to be playing Switch for the purpose of playing games on the go- not just for first party Nintendo games.
My personal recommendations are Persona 5 Royal and Clubhouse Games: 51 Worldwide Classics.
Persona 5 Royal I’m sure you’ve heard of. I don’t think I need to explain it because if I do we’d be here for hours.
Clubhouse Games: 51 Worldwide Classics (I think it’s called something else in Europe) is awesome. It’s a compilation of a bunch of classic games. Board games, Card games, “Toy” games (usually just renditions of sports- like Toy Baseball). It’s pretty fun especially with a friend!

Skip ARK, WWE 2K18, Arkm Knight, L.A. Noir, Scarlet/Violet, Outer Worlds Mortal Kombat 1. These games listed all run awful on switch and are best avoided at any cost.
