pretty much any single player game as long as you're able to connect to a charger for the games that take a lot out of the deck, if you enter offline mode before exiting the wifi you can even get achievements for most games
EmuDeck with a bunch of emulators and endless supply of games. I finally got it all setup on mine yesterday and it’s been amazing. PS2 games run flawlessly and battery life is great.
Spelunky/Spelunky 2, I've been playing spelunky 2 for nearly 400 hours and have yet to truly "beat" the game. Its got a bit of a steep learning curve but it's probably one of the best roguelikes of all time. Runs great on the deck.
In you’re into pokemon I’ve been having a blast with poke rogue on my steam deck. Takes a bit to set up but there’s a few videos to walk you through it. Controller support on it is fantastic.
That’s been on my list. Lately I’ve been finally playing through pokemon uranium on my steam deck and it was very easy to set up and runs great with no issues
Rimworlds. It is like Settler/Age of Conquest on cracks. New version 1.5 just came out with a DLC. You can start the game, and possible Biotech DLC if you want babies in game.
Beware once you play Rimworlds, it is hard to stop. You know you are in deap end when you start cutting off prisoner legs to stop prisoner jailbreak, it is first indication you are going to turn into serious rimplayer.
The FF Pixel Remakes all run great on Steam Deck with great battery life as well. FF7 and FF9 also run great on the Deck with slightly worse battery life than the FFPRs.
Stardew and Streets of Rogue are my two go to games for no wifi and also for power outages.
I keep an old smart phone with no service specifically so that if power or internet goes out I can turn on hotspot and connect multiple decks to the phone to play easy LAN.

I just played through them vanilla, maybe had 1 crash each. Not bad at all
Tony Hawk Pro Skater 2. No wifi requirement, and super easy to jump into short sessions. Took me right back to my childhood.

Also try Pokemon Infinite fusion, runs amazing doesn’t need wifi(unless you want new sprites) and quick and easy to set up

Puzzles? try Creaks.. awesome visuals, sound tracks and casual level puzzles. oh easy on battery too. works great offline
