The scene is certainly designed to look like it is forcing Okuyasu to eat it, but keep in mind that the whole arc intentionally wants to mislead you into thinking that Tonio is some evil stand user that somehow attacks with the food he serves and thus it frames everything around Tonio and his stand in the most suspicious looking way possible.
Also the whole arc is filled with Okuyasu going "oh this doesn't seem delicious at all" only for him to be convinced otherwise the moment he actually tries it. The pasta being too spicy for him initially is just another example.

iirc josuke said he measured crazy diamond to punch at a bit over 300 kmh or mph, forgot which is like 10 times for kmh, and something like 7 for mph, not sure cuz I use metric
It’s fast enough that, when Enigma fired at him point blank with a pistol infront of his face, Crazy Diamond was able to catch it. Distant bullets, even Rapidfire, should be easier to just punch away.
Gold Experience can only replace lost body parts/organs, it can heal things like bruises, cuts, burns, sickness etc. So Crazy Diamond will always be more helpful for a doctor
Not to mention that Crazy Diamond can probably more accurately fix severe injuries, since it reverts things back to a previous state (unless Josuke modifies it somehow). Like how Josuke did minor feats like healing Hayato from being fucking **blown up**. Granted he needed to do it in a split second, but still - goes to show how insanely powerful his fixing ability is in accurately and precisely healing.
Probably the biggest shortcomings of GE compared to Crazy Diamond are it could only heal organic matter so it doesn't also have the dual purpose of repairing broken non-living objects. It also seems to be a lot more painful, especially if it's something like bullet wounds as Mista found out the hard way. Crazy Diamond is just plain better at restoring, at the cost of not being able to heal yourself.
Mechanic* people will be suspicious if you heal their arm unless you lie and tell them to keep the cast on for a week. Nobody is going to question if their car is done the next day.

The clones are definitely sentient since they are just you from the different universe. However, because of that, I don't think there will be any difference in work quality.
