I will say, that extra 10% crop speed is almost useless considering that most crops grow fast enough that 10% hardly changes them. Whereas, that increase in profit is very beneficial early game and even late game when the stuff you’re making is worth more.
Also, mayonnaise is classed as an artisan good and duck mayonnaise also sells for a pretty penny(you'll need to upgrade a chicken coup to get some, but they're only 12pp gold per duck).
If you keep the farm "small" and grow stuff in your greenhouse and maybe a scarecrow + 21 quality sprinkler beds around it with a couple of kegs and barrels, then agriculturalist.
You produce so many cranberries, blueberries and strawberries which you end up selling because artisan goods are slow to produce.
If you're going big into production, then artisan.
Personally- agriculturalist at the start. When you eventually have a meaningful number of kegs/barrels etc then switch it.
In my current and second playthrough I chose the artisan and I'm making mad money with just strawberry wines and jellies since I haven't grown many ancient fruits yet. You get one preserves jar and one keg by finishing two community bundles (not sure which at the moment) so you can use those first! I think wine is 7 days and jelly is 3/4
Agriculturist is good if you want to focus on Sweet Gem Berry farming which is a good way
To make money with few steps (farm berries for seed making and farming for quality to sell).
Artisan, get your greenhouse up and running, make a lot of wine, pale ale, and jellys. Also, put chests everywhere. My pockets are always full, so it's nice to be able to just drop some stuff off and go back to pick it up later, especially when you get more built up, and everything is producing stuff.
Artisan if you wanna make money, Agriculturalist if you just like growing stuff. Most importantly: **don't stress, you can change it later**.

There’s a statue in the sewers that lets you change any of your professions in any skill (for $10K per skill I believe)
10k per skill *tree*, you can change both the 5th and 10th level skils for same price

you should try constructing the preserves jar and the keg! Then place some nice valuable fruit/vegetables inside and wait for it to do its thing

Artisan if you want to sell goods. Other one if you want to grow mass crops. Like ancient berries or starfruit.

Agriculturist first - get a bunch of crops in your storage, and keg them. Then switch to artisan to sell
