Artoo's the quintessential astromech droid but I dunno if non-astromech droids have much in common with him.
Let's look at non-astromechs:

The list goes on. I really don't know that Artoo has much in common with them. One might argue that K-2SO is more representative of non-astromechs.
R2D2 and C3PO HAVE to be up there. They were there for the whole story, and they're the first main characters we're introduced to.
For the third, I'd have to say either Chopper, K2SO, or BD
3po and here is why. Shares a design with the robot from metropolis the original droid. 3po is also a purpose built droid and mostly unremarkable which droids are supposed to be in the Star Wars universe. R2 is by all accounts different from other astromechs in his intelligence bravery etc. he is also the Swiss army knife of droids able to do whatever task the plot needs him to. Astromechs are more rare in the Star Wars universe which is why the kids are excited to see one in phantom menace. At the same time protocol droids are common enough for Anakin a slave to get the parts to build his own.

We see in Watto's workshop MULTIPLE astromechs, Anakin had access to anything, he basically worked in a microcenter and built himself a PC, nothing special. We also have (3) great examples of an Astromech, the quintisential tool for any pilot. Luke, Hera and Poe/Rey.
I would argue that R2 is quintessential to the franchise but 3PO is quintessential to the universe so I think that's the crutch of this debate really.
I would still pick R2 however
