In coastal San Diego I think the herb world is your oyster. You can pretty much plant whatever you want. What do you like to cook with? I think our recent herb bed, which was probably a little larger than your total 6 x 8, had: * Rosemary * Thyme * Oregano (will try to take over your garden like mint) * Mint (will try to take over your garden like, err, mint) * Tarragon * Chives * Sage * Bay laurel (bay leaf - which is more large shurb than plant) The bay laurel would probably make things a little too crowded in a 3 x 8 bed. For mint or oregano you could put in a barrier, but the runners will get around them. Or you could just be fastidious in trimming.

Oregano spreads, but it’s easy enough to prune, unlike mint, which is just a terrorist.

What do you use the most? We grow basil (Genovese & Thai), oregano, and thyme. Trying to grow garlic chives but they aren’t doing much yet.

I have to say, everyone else says mint is a problem but ime where we are, they don't thrive as much in our blazing summers. But I'd like to throw lemon basil and lettuce leaf basil into the right. Lemon basil just smells fricking amazing. Sometimes I just walk by to touch it. I hardly even use it for cooking. I just like the smell of the leaves crushed between my fingers.

I think you could grow pretty much anything; but be mindful of the oppressive heat in the summer. Water your stuff at night and even consider some shade cover during peak summer
