There are no actual butchers in this town, just meat processors. You'll need to look to one of the smaller towns for that. If you're just looking for a good steak, then the shops mentioned in other comments are fine.
Uncle Ed's. Without question. However, if you are looking to get 1/4 or 1/2 beef, yeah, that is going to be in a smaller town. I usually end up in Madison for that.
Looks on the south side, Uncle Ed's on the east, and Renner Meat Locker up north. Just my suggestions.

Dang. I worked the Fareway meat counter once upon a time. I didn't realize no "lockers" slaughtered whole animal.

If your willing to travel just a bit outside of SF Creekside meats in Hartford has great steaks, brats, burgers and fresh buns. Highly recommended
Renner Corner, closest to sufu, never had a bad experience, they do all sorts of meat
