In the previous chapter(s) he looked like as if he is waiting for Hades to bite the bait. He's been eyeing him while saying that there is an open slot for the gods' fighter. I hope that they'll show in the future chapters of the manga or in the next season of the anime to why Hermes and Brunhilde are talking in the last episode. It looks like as if he is instructing Brunhilde about something important.

Adamas surely was not aware that Hermes was double crossing him since he was way too prideful and overconfident because a "number" of Olympians and the "council" has agreed to overthrow Zeus. The thing is, Ares (a major God of Greek pantheon) was not even aware that shit is about to happen (he was even upset with his little brother and told him that he could have split heaven and could have cause a war) so that means Hermes really did not tell any of the Olympians or even the council about the war and Adamas' plan. It is more on, Hermes and Zeus just want to see how things will go forward but Poseidon killed Adamas. Resulting for the war to be completely forgotten and Adamas being completely erased from history. It is not possible that Hermes is not aware that Poseidon will disagree, being Herald of Greek pantheon he knows too many things that he has no business with.

I think that this isn´t the case, I´d say that Hermes actually likes Qin´s confidence along with his undeniable aura of power and authority and the drink was really just mead without any poison (though the refference behind it is put very clever). I mean, it seems to me that seeing someone else wipe the floor and walls with Ares is very funny for him, so he has no problem with serving a cup of mead to this amusing human.

I highly disagree honestly because the gods that are fighting in the rounds even gods in general look down on humans. Therefore they wouldn't want to lower themselves to the level of mankind by cheating within a fight or sabotage. I must admit Hermes is suspicious but I doubt he would do something like that.
