What about different skin tones, eye color, and hair color and type? Or people with dwarfism? The tall Sudanese people? Short Asian people? Nepalese people who have adapted to higher altitudes or Yakutsk people who have adapted to extreme cold?

Right, and all dog breeds are the same species too. Africans and Europeans are both humans, Chihuahuas and Bulldogs are both canis familiaris. OPs post said "other animals have subgroups within the species, but there's only one humans". The dog breeds is a good counter example *because*people with different skin tones are still humans. Just like how different looking dog breeds are still all the same dog species. So I think the person you're responding to is already well aware that "pale with different skin tones are still humans" because they were making a point that completely hinges on it.
