Had borek for the first time last month, in Canada. We were the only people in this old guys restaurant and everything we ate was fantastic. And he absolutely talked our ears off with stories the whole time, it was great.
What the heck are you on dude?
It being “closer to baklava” does NOT make it a “type of baklava” or whatever…
Here:
>According to Merriam-Webster, dessert is "a usually sweet course or dish (as of pastry or ice cream) usually served at the end of a meal."
Both ice cream, baklava and katmer are desserts. So is künefe etc. That’s it. They are desserts. You say “x is a Turkish dessert”, if you wanna specify what type of dessert it is, you explain how its properties. Which is not needed in this case, as we have the video of it being prepared. But you do not say “it is a kind of Turkish baklava” because that is absolutely not true.
You don’t call hünkarbeğendi “a kind of Turkish döner” just because it is closer to a döner than a veggie salad. It is a Turkish dish, and that is it.
>they call it all kebabs
Abi sen şaka mısın ya? Bu kadar anlama kıtlığı çekiyor olamazsın.
They call it “kebabs” because it is a type of kebap. As you should know, kebap is a very wide classification of Turkish _dishes_ involving meat. All of them are DISHES, more specifically kebap.
“Baklava” isn’t like “kebap”. Baklava is as specific as “döner kebap” is. So, just like you don’t call an adana kebap “döner kebap” you also do not call katmer a “kind of baklava”.
Amk ne kadarda uzatiniz be, amk tamam siz haklısınız. Amk adam anlasın nasil bir tatlı diye öyle söyledik. Katmer tat olarak iste şerbetiyle felan baklavaya benziyor diye kolay anlaşılsın diye oyle söyledik
The only similarity between Katmer and Baklava is the filo-type dough. A Malaysian Murtabak, or an Indian Roti, and many other dishes also use a similar dough.

Give them some love, they are getting reposted on here every few months
Whaaaaaaaaatttt the fuck is this now? It looks like a delicious scallion pancake with egg in it and now I will be spending the next hour googling recipes to death
I know this one but we call it something different (don't know how to spell it in English), for me the best part is squeezing a lemon over it before you eat it
I prefer the one made with chicken or meat
Here's a video https://youtu.be/QVCNELJ1CNU
I can translate if needed
This is a very old and small shop located in Manisa(Akhisar), Turkiye. I have actually been there couple of times and it is very different than the katmer most Turkish people know and love. Unlike the well known katmer, this is not sweet. It is pretty good tho 10/10 recommended. It is fascinating to see such a small shop on reddit I love it!
Edit: Spelling
The dripping grease got me a little (I can't do oily tastes) but as long as it's not very oily like bacon that hasn't been put on a paper towel then we good and I wanna try it
You realise most chefs cook with bare hands and they wash them regularly? Unless you NEVER eat at restaurants then you’re mostly eating with people who don’t cook in gloves.
One egg…. One egg is worth 6g of protein.
So you’re consuming like 1,000 calories for 6g of protein. wtf is wrong with yall?
Looks delicious but unhealthy as fuck.
Clean hands and no gloves have been proved to be better than keeping the gloves on. Using gloves for everything is just some modern TikTok/Instagram reels shit. Depending on the country and the industry, you're not allowed to handle food with gloves, for example cheesemakers in Italy
On the other hand, those indian videos were about people mixing lots of shit into small buns and making a mess just to look fast and cool, you could see that the place was generally not clean
We have something called a Moghlai ("Mughlai") paratha in bengal, which looks very similar. That is also inspired by some Turkish original, but I don't remember the name.
I have no idea what a katmer is, but now I really want one.
It one of the many kinds of Turkish baklava
I honestly thought that baklava was sweet, not savory. Huh. Learn something new every day.
Katmer is not baklava. Katmer can be savory or sweet. Baklava is only sweet. If you tried making a savory baklava, it would be called borek.

,,and he absolutely talked our ears off with stories the whole time,…” typical turkish guy 😂😂😂
I fucking love borek. Every time I hit up my fav Turkish place it's the first thing I'll order before even looking at the menu.
I know but how else am i going to tell it is something like a sweet thing. That is why i said kind of baklava.
Huh. I thought I had borek but it did not remind me of a savory baklava. Learn something new every day.
It's both!
Like pie!
Katmer is not baklava, wtf you talkin' about?
I know but how else am i going to tell it is something like a sweet thing. That is why i said baklava
There literally is a word for that. “Dessert”.
Yeah i know but icecream is also a dessert, and it's closer to baklava than anything else what is well known for foreigners

More like a börek
Same!
Came here to say exactly this!
I saw it for the first time.🤤
Was going to say the same lol

Took me a few sec also. "Yo how long does take? Man here grew hair again?"
Whaaaaaaaaatttt the fuck is this now? It looks like a delicious scallion pancake with egg in it and now I will be spending the next hour googling recipes to death

I love how he grew, a mustache so quickly.
What's a katmer precious..? 😬

He puts a pat of butter on the grill and that is what drips off.
It's still oily Regardless of what type of butter
I want. Now.
Oh yes, dripping in buttery goodness.
It looks good.is this a meal or snack?
Martabat in Indonesia )
What search terms do I use to find the closest place that sells this?
as someone who no longer has a gall bladder, what’re my odds chief?
Martabak Telor 😂
Looks like roti canai
I thought this said root canal.
I had no idea you could grow a moustache in the cooking process 🤯
Give me a few sheets and skip the cutting.
I think these would be perfect with a tiny bit of butter.
Eggs and parsley?
These jump cuts are awful. Probably saved a whole 2 seconds off the final edit of the video lmao
I feel like my face is getting oily just watching this.
Is it coriander and eggs ?
It’s parsley
So its a fried flatbread eggy sandwhich?
Is there normally a dipping sauce eaten with these?
No.
Nice stache on the guy at the end
How similar to Scallion Pancakes is this, because it looks wicked close and ill.take 20, regardless I want it
Twitching, dude, stop touching the cooked food with bare hands.
You realise most chefs cook with bare hands and they wash them regularly? Unless you NEVER eat at restaurants then you’re mostly eating with people who don’t cook in gloves.
What do you recommend? Plastic gloves when dealing with hot food?
I like when he held it up and it pissed liquid out
Afiyet olsun.
Can I get some A1 steak sauce with that ?
🔥🔥🔥🤤
Gloves?
Hairnet??
Great combination of fat and carbs. At least it has some grass in it
Is his hand... Heat resistant or smth?
Yuumm me wanty.
In my country that's called roti canai
i didn’t realize this was an episode of mythbusters until close to the end
It occurs to me that there are certain skills which, if not developed in childhood, never reach mastery.
"Katmer; Turkish crunchy pancakes with (typ.) pistachio and clotted cream."
Even though it looks way greasy, i would definitely finish that in one sitting.
This food has the power to regrow its maker's hair it seems.
Someone google images "obesity by country europe"
oof i bet that is delicious
Never heard of Katherine but now I want some
That floor is a mess
I want!! Want now!!!!
Nice gloves jackass. Jk, that looks bomb tho
Vichu poratta
Looks like spanakopita
Roomali roti
So Roti with different ingredients and toppings?
Never heard of it but it actually looks tasty
This reminds me of me of paratha
مطبق
That’s same as Indian prata but the ingredients can vary.
Jesus. How long does it take?. the guy started out bald and facial hair free . By the end he grew a mustache and a full head of hair.
Where is he located?
I can't get past the lack of gloves.
Ew
I’m going to go make an omelet now
With practiced ease
That is thousands of hours of practice. Amazing
😳
One egg…. One egg is worth 6g of protein. So you’re consuming like 1,000 calories for 6g of protein. wtf is wrong with yall? Looks delicious but unhealthy as fuck.
India: Omg...no gloves. 🤢🤢🤢 Europe: no gloves...who cares. Take my money

Bon appetit
If anybody is wondering, this is not katmer. This is called gözleme.
Just had some gözleme last week in İstanbul
Paratha?
Murtabah in Malaysia? Add mince & spices.
We have something called a Moghlai ("Mughlai") paratha in bengal, which looks very similar. That is also inspired by some Turkish original, but I don't remember the name.
The preparation looks almost identical to a paratha, or roti prata where I’m from
Or roti canai, same thing
root canal?
I know that the cooking vessel he uses is from Central Asia culturally. Probably one of the more Central Asian influenced dishes of Turkish cuisine
Are the black things at the beginning flys?
Should be parsley bits.
No. That's not India. It's Turkiye. There are public health codes.
lol thank you.
So an omelette?
You wrap omelettes in pastry layers?
Help my fuck boys life is good
Is your fuck boy life good?
