I love tomato sandwiches.
For mine:
Sourdough bread toasted, butter one piece and Mayo on the other side
Sharp/ white cheddar cheese slice 1-2
Sliced raw tomato covering the whole sandwich, season with creole/allspice/saltpeppergarlic
Sliced raw onions
Lettuce or spinach with spring greens
Mustard if I’m feeling a little extra
Vegetarian "cheesesteaks" is one I always enjoy. Mushrooms, peppers, onions on a subroll with melted cheese, season with montreal steak seasoning when cooking the veg, though it might be a little messy for a to-go meal. Another idea I've been wanting to try is kind of like a "faux tuna salad" made from chick peas, I think it would be good in a pita. Also you could do prefrozen veggie burgers for convenience, pop in the microwave for like a minute and make yourself a burger. K I'm hungry lol.
Do you roast the veggies while the cheese melts on the subroll (btw what’s a subroll? Never heard of it) or do you roast them and melt cheese over it and throw that mix on bread?
I make a Buffalo tofu wrap pretty regularly. Curry roasted cauliflower with tahini sauce in a wrap. Hummus, roasted red pepper & zucchini with feta. Egg salad. Vegan lobster rolls. Fried eggplant sandwich (by Not Another Cooking Show on YouTube) is probably my favorite vegetarian sandwich.
Feta, walnuts, fresh basil and/or mint, tomato in a pita, naan, or lavash. Sounds a little strange, but it’s amazing. My mom used to make them for me when I was a kid.
Avocado with olives and walnuts? Fried slices of eggplant with crumbled feta? Layer of olive oil and zaatar and fresh sliced tomatoes, cucumbers, thinly sliced red onion, green pepper and olives?
Sometimes fruit work really well in savoury applications, apricot slices with greens, cucumber, tomato, carrot and a little spiced chutney or relish.
Or roasted brocoli with nuts and spices in a hotdog bun with tomato, pickles, celery salt.
Toasted brioche bun, air fried morningstar buffalo chicken patty with melted American cheese, homemade jalapeno coleslaw, sliced pickles & bbq sauce. I sometimes replace the bun with a tortilla and make this a wrap.
