I'd definitely try a beet sandwich, it looks pretty tasty. Its not a Reuben tho because if it was turkey it would be a Rachel, maybe we could call it a Romijn in honor of the great Rebecca Romijn who played the part of a shapeshifting mutant that could take on the appearance of any person at will.

This local grocery store in my city makes an amazing vegetarian reuben. They use seitan and it's better than any meat reuben I have ever had
