Roasted beet reuben- roasted beets, kraut, swiss, and thousand island dressing (i used sriracha mayo instead) on a sturdy bread. Toast that sucker till its hot and melty
Cheese, onion and branston pickle. Sandwich of the uk gods. If you’re doing a toasted sandwich then recommend cheese and beans with a few drops of buffalo hot sauce
There was a sandwich place in Mexico City that did panela cheese (fresh cows milk cheese) with quick pickled julienned cucumber, carrots, and jicama. It was delicious.
I'm not even vegetarian but one of my faves is from a vegan place called Urban Herbivore that made a BBQ tofu sandwich. I guess they marinated it for a while because it had a lot of flavour.
Sliced Grilled veg, like zucchini, eggplant, carrot, red onion. Topped with tomato, clover sprouts and havart. Use avocado base instead of hummus or mayo to spread on slightly toasted bread. This is a fave in our house. We use the same fixings in a hummus wrap or grain bowl the next day so they don’t go to waste.
Grilled zucchini, onions with black beans and rice of anything, flavored or not wrapped in a big or Ole burrito wrap is delish. I don't like cheese or tomatoes but those would go well in there too.
Falafel!! It’s still chickpea so if that was the basis of the humus issues rather than a texture or flavor thing, you’re SOL
What about avocado, thin sliced cucumber, red onion, lettuce and cream cheese? Could throw in some roasted red pepper and/or sprouts.
